Wine Dinners Chez Nous!
If you’re ever dining at République and find yourself wandering around the beautiful space, head upstairs and check out one of the restaurant’s most iconic features: the upstairs cellar overlooking the Main Dining Room. It’s one of several wine cellars in the building, and the adjacent room is the setting for our regularly-held wine dinners.
Offered at least once each month, and often closer to once a week, these events are at the heart of Republique’s wine program. Small, intimate affairs open to no more than 16 guests, our dinners are always unified around a central theme: an overlooked region in Germany, perhaps, or a deep study of one of Burgundy’s great producers, or a comparative analysis of vineyards or vintages in Barolo. Whatever it may be, we always have the winemaker or owner of the featured estate present at the table; we learn the most about wine when talking directly with producers, and this offers our guests the same opportunity.
