Siembra Spirits Agave Dinner | Monday, March 25

On Monday, March 25, we along with K&L welcomed producers from Michoacán and Jalisco for an interactive discussion on agave paired with a special 5-course menu from Chef Walter Manzke.

We explored the aromas and flavors of these new to market agave spirits, from the labels: Mezonte, Cascahuin, Pajarote, Don Mateo de la Sierra, and Siembra Valles. Learn about the practices it takes to create these complex and remarkable distillates and what goes on behind the scenes to preserve these ancient methods of production, with prominent leaders of the agave industry.

David Suro of Siembra Valles, Siembra Azul, Suro Imports, creator of the Bat Project and Tequila Interchange Project, and owner of Tequilas Restaurant in Philadelphia.

Pedro Jimenez of Mezonte, a brand noted for preserving the production and practices of traditional agave spirits, owner of Mezonte, De La O and Pare de Surfir in Guadalajara.

Monica Leyva of Pajarote, a new-to-market, handmade line of Mexican liqueurs using traditional flavors.

Emilio Vieyra, the 6th generation distiller of Don Mateo de la Sierra & Siembra Metl mezcales.

Salvador Rosales Trejo, Owner of Cascahuín Distillery and Tequilas, family owned and operated since in 1904 in El Arenal, Jalisco.
