République Welcomes Apollonia Poilâne | Cookbook Dinner | Tuesday, November 5

Join us for a collaborative dinner celebrating the art of bread with Chef Walter Manzke, featuring the Poilâne Cookbook, at République on Tuesday, November 5.

Apollonia Poilâne, of the renowned Poilâne Bakery in Paris, will be visiting République for a 5-course dinner alongside Chef Walter Manzke. Incorporating Poilâne’s famous bread and drawing inspiration from the new cookbook, join us for a special evening alongside the two chefs. This collaborative dinner will feature both family-style and individually plated courses to make for a communal and lively evening together.

Taking place at our kitchen tables within our bakery space, celebrate the launch of the Poilâne Cookbook, which is included in the ticket price. Optional wine pairing by Wine Director Sam Rethmeier is available for purchase as well.

Château Margaux Wine Dinner

Located in Mid-City close to Miracle Mile, the David Kordansky Gallery is composed of two adjacent gallery spaces featuring contemporary art of Los Angeles, national, and international artists. Its programs are comprised of solo, group, and historical exhibitions with a focus on the dialogue between the artists simultaneously being showcased. The gallery features multi-generational works from both emerging and internationally acclaimed artists and will expand this spring to span nearly an entire city block.

Tuesday Night Wines with République Wine Director

At République, we are thrilled to have a large selection of wines, but a large list can feel intimidating to some. Wine Director Sam Rethmeier created a section of our wine list called “Tuesday Night Wines”—the concept is based around drinking wine on most nights when Grand Cru or First Growth isn’t an option. So what do you drink on a Tuesday night? Everything we’ve selected is delicious, under $100 a bottle, affordable, and high quality. Get more insight on the list from Sam:

Why and when did you start the Tuesday Night Wine program?  I wanted to broaden the scope of what was offered at République and I put together a list of 2,100 selections, and the menu went from 1 to over 100 pages. I was really proud of it, but when I gave it to my wife to look at, the first words out of her mouth were “that’s intimidating.” Do I really expect guests to sift through every page? That’s when the Tuesday Night section was born; two pages of sparkling, white, rosé and red with nothing over $100.

What are some of the secrets to putting it together? Non-stop tasting. I really wanted to put together a list of wines I would drink. I wanted to be just as excited to help someone discover this incredible Bourgogne Rouge at $68 as I am when someone wants to drink Frédéric Mugnier for the first time. It’s a magical time in the world of wine; there are so many producers making incredible adventurous and classic wines.

How much is your Tuesday list related to specific dishes on the menu and how often does it change? I try to rotate producers on and off of the list, but the style or type of wine more or less stays the same. I’m way less tied to this idea that we have all the “right” pairings. When I eat at In-n-Out, I always drink a coke with my burger. It’s one of my favorite pairings and tied to my childhood memories. So I try to reflect that feeling with the Tuesday Night list and pick what people want. If you really want that Napa Cab, I want to open it for you. You want Zinfandel? I can help you with that too.

Ernst Storm Wine Dinner | Tuesday, May 21

On Tuesday, May 21, 2019 we welcomed Ernst Storm of Storm Wines for a special 3-course family style menu from Chef Walter Manzke. The dinner featured ingredients from Santa Barbara, paired with wines from the region.

ABOUT ERNST STORM

Ernst Storm grew up in South Africa and completed his studies at Elsenburg Agricultural School, which is just outside the town of Stellenbosch in the Western Cape. After completing his final year, Ernst worked as a winemaker in the Stellenbosch region and also spent two harvests in the cooler Walker Bay region in South Africa, while consulting on a few smaller projects with his brother Hannes.

Ernst wanted to experience a Northern Hemisphere harvest and took a job in the Sierra Foothills of California where he spent two years working in this warmer climate—learning a lot about managing higher pH wines and riper flavors. Having come from a cool climate region, he longed to make more balanced wines from Pinot Noir and Sauvignon Blanc. Ernst found Santa Barbara County and saw a lot of potential. The Mediterranean climate shares many similarities with that of the Western Cape. Diverse soils and microclimates within the county make it a region with endless possibilities.

Ernst worked at Firestone Winery for three years, which proved to be a great learning experience. He worked on a larger scale and did a lot of experimentation with Sauvignon Blanc and other varietals. Storm was started with 6 barrels in 2006. In 2008, Ernst became involved in the winemaking at Curtis Winery. At the end of 2013 he left Curtis to focus on Storm.

Storm is focused on making classically styled wines from proven sites; and wines with personality of vintage and site, where elegance is favored. His brother, Hannes, launched Storm Wines-South Africa in 2012. His focus is Pinot Noir and Chardonnay from the Hemel-en-Aarde Valley.

Strawberry-White Chocolate Scones Recipe by Margarita Manzke

Follow Chef Margarita Manzke’s recipe below to make Strawberry-White Chocolate Scones!

Strawberry-White Chocolate Scones
Makes 15 scones

Ingredients:

500g / 4 cups all-purpose flour
20g / 1 Tbsp plus 2 tsp baking powder
100g / 1/2 cup granulated sugar
4g / scant 1 tsp fine sea salt
600g / 1 lb 5 oz strawberries, hulled and cut into quarters
600g / 1 lb 5 oz white chocolate, chopped
528ml / 2 cups plus 3 Tbsp heavy cream
80ml / 1/3 cup honey
100g / 1/2 cup turbinado sugar, for sprinkling

Directions:

1. Put the flour, baking powder, granulated sugar, and salt in a large bowl and thoroughly mix. Add the strawberries and chocolate and dredge with the dry mixture. Make a well in the center and set aside.

2. In a separate bowl, mix the cream and honey. Pour into the center of the well. With a plastic dough scraper, slowly bring the dry ingredients into the center. Use a cutting motion with the dough scraper to incorporate the ingredients, being careful to limit the number of times you do this so as not to overwork the dough. 

3. Line two baking sheets with parchment paper.

4. Divide the dough into 120g / 4 oz mounds and place them, spaced evenly apart, on the prepared baking sheets. Chill for 20 minutes in the freezer. 

5. Preheat the oven to 350 degrees Fahrenheit.

6. Sprinkle the tops of the scones generously with the turbinado sugar. Bake the scones until golden brown and a toothpick or cake tester inserted in the center comes out clean, 20 to 25 minutes, rotating the pans after 12 minutes to ensure even baking. Remove the scones from the baking sheets and cool on a cooling rack. Serve immediately. These are best the day they are made.
